These chocolate peanut butter no bake cookies extra chewy, filled with texture and have a delicious chocolate peanut butter flavor. You only need a few simple ingredients to make these highly addictive treats! 




 

I love a soft and chewy cookie – and when there’s peanut butter and chocolate – I definitely can’t so no. You’ll love eating these chocolate peanut butter no bake cookies because they’re so flavorful and full of texture. But what’s even better is how easy they are to make. You only need a few simple ingredients that you likely already have in your cupboard, and there’s no need to turn on your oven.

Our mom somehow raised seven kids with a hot breakfast every morning! Oatmeal was a household staple as a little bit went a long way to sustain us through the morning. Not just for breakfast, an easy family night dessert was also her famous oatmeal Chocolate No Bake Cookies.  I’ve doctored the recipe up a little over the years to create a cookie that is both low-glycemic and high in protein. (Kids these days! I know.) It’s easy to substitute ingredients with this recipe so it meets your dietary or taste needs. Here’s my updated recipe along with all of the health benefits of the ingredients I’m using currently. There is a method to my madness!




 

No Bake Chocolate Peanut Butter Cookies

Ingredients

  • 1/2 c butter
  • 4 Tbsp cocoa
  • 2 c sugar
  • 1/2 c milk
  • 1 tsp vanilla
  • Heaping spoonful peanut butter
  • 3 c regular oats

Instructions

  • Measure out the oats in a separate bowl. Melt the butter in a saucepan, pour in the cocoa and combine. Pour in the sugar and milk. Let boil for 2-3 min then take off the heat and add vanilla and peanut butter. Pour over the oats and mix together. Spoon cookies out onto foil and let set. Makes 15-17 medium size cookies.

NOTES

Be sure to use Quick Oats. I tried using rolled oats, but didn’t like the results. They were crumbly and dry.

I use creamy Jiff Peanut Butter for the best results.

Work quickly once you add the oatmeal to the chocolate mixture. The cookies will thicken once the mixture starts to cool.
